Steak Fajitas with Mango Salsa
I try to make homemade meals nearly every night of the week. Picking up take-out has become a last resort for us in our efforts to eat more healthy. So when things are just to hectic to cook a full meal from scratch I take a few short-cuts to make dinner quickly and easily with the help of my freezer.
I have a separate deep freeze, where I keep all of meats and frozen vegetables. I also have several frozen dinner options in the freezer on hand so we don’t have to pick up something late in the evening. Frozen dinners aren’t what the y use to be. There are so many delicious family meals in the freezer isle like lasagnas, soups, Asian dishes and Mexican dishes like these steak fajitas.
For this quick family dinner, I just started with 2 packages of Old El Paso Steak Fajitas and a package of corn tortillas. After making the fajitas per package directions, I served them with a simple mango salsa that also uses frozen diced mangos. I love how this dinner uses a mixture of fresh and frozen ingredients to make a very quick and easy family meal that’s also nutritious.
For dessert, the freezer isle is filled with decadent options. But for something a little healthier, try a fruit sorbet or a frozen fruit bar.

Steak Fajitas with Mango Salsa
Yield: Serves 4
For the Fajitas:
2 - 20 oz packages Old El Paso Steak Fajitas
Corn or Flour Tortillas
For the salsa:
1 cups frozen mango chunks
1/2 cup peeled, diced cucumber
1/3 cup diced green onion
1 small jalapeno pepper, diced (substitute bell pepper for mild)
the juice of 1/2 lime
1/3 cup roughly chopped cilantro leaves
Salt and pepper
Prepare fajitas according to package directions. Fort he salsa, combine all ingredients in a medium bowl. Mix well.
Serve fajitas with warmed corn or flour tortillas, topped with mango salsa.
