Red Beans and Rice With Andouille and Okra

In our family, we eat red beans and rice as often as we do pizza. It’s one of our favorite comfort foods and absolute favorite Cajun dishes. I always have the ingredients on hand for a just in case emergency red beans and rice dish.
This week I needed to pull out my emergency red beans and rice dish pretty early in the week. It’s been a really busy week. My son started soccer, I have a teething baby at home and the laundry pile is embarrassing. No matter what I try and get done, my daughter is so fussy with 6 teeth growing in, I’m getting absolutely nothing done.
When my little one isn’t fussy, she’s trying to put everything she can in her mouth. She also loves foods now and even in the grocery store she won’t settle down until she swipes a piece of fruit from the cart. I’ve always hated the idea of sneaking grapes before you pay, but sometimes I just give in.
So after today’s long hectic day, I made red beans and rice. I make it a few different ways, but this is my absolute favorite. This version is made with andouille sausage and fresh okra. To really put it over the top, I sometimes also add some crawfish. That’s when I have the time to prepare them though.
To start this dish I just brown up my favorite sausage, Aidells® Cajun Style Andouille. I buy it at my local Publix where I get a great deal on it. It has a wonderful authentic flavor that works beautifully in this dish as well as our other favorite Cajun dishes like jambalaya and gumbo.
Next I add bell peppers, celery onion and garlic. Then canned tomatoes, fresh okra and red beans. I also add my own Cajun seasoning that I make myself. After this simmers until everything is nice and tender, I finish it off with gumbo file.
To serve, I garnish with some fresh Italian parsley. And for the adults, we add some Louisiana hot sauce.

Red Beans and Rice With Andouille and Okra Recipe
• 1 12oz package Aidells® Cajun Style Andouille sausage, cut in slices
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 1 1/2 cups diced okra
• 2 stalks celery, diced
• 1 medium onion, diced
• 1 – 15 oz can small red beans
• 1 – 15 oz can diced tomatoes, or 2 large diced fresh tomatoes
• 1 clove garlic, diced fine
• 1 teaspoon Cajun seasoning
• 1 teaspoon gumbo file
• Prepared parboiled or white rice
• Italian parsley for garnish
Cook rice according to package directions.
Preheat a large skillet. Add sausage and lightly brown. Then add bell peppers, celery and onions. Sauté until tender. Add garlic, Cajun seasoning, beans, okra and tomatoes. Season with salt and pepper to taste. Cook for 15 - 20 minutes, or until bell peppers are very tender.
Right before serving, stir in gumbo file. This will make your sauce thicker too. Add water if necessary.
Serve over cooked rice garnished with Italian parsley.
