Albondigas (Mexican Meatball) Soup

This year has really flown by for us, and I can’t believe Thanksgiving is coming up so soon. And soon after that there will be lots of holiday get-togethers and celebrations with friends and family.
This time of year I love to stop By Sam’s Club. Since I’m cooking so much, it really makes since to buy many of our items in bulk. It saves me both time and money. I buy almost all of my staple vegetables and fruit, as well as things I’ll be using a lot of like butter, sugar and flour for baking all those holiday treats.
There’s also some delicious items I like to pick up from the frozen foods section that make cooking our favorite recipes a breeze. One of my favorite items is Casa Meatballs. They’re easy to prepare and can be used in so many different recipes from just cooking for your family, to entertaining for friends and even for dishes that you can take to potlucks.
My son’s favorite way to eat meatballs is of course, spaghetti and meatballs. He could eat it everyday if I let him. I also like to use Casa meatballs to make appetizer slow cooker meatballs for entertaining. They’re always a crowd favorite. But one of my favorite things to make with meatballs is a warm hearty soup like this wonderful Mexican soup called Albondigas Soup.
This is a simple Mexican soup that’s traditionally made with a rice filled meatball. Here I’ve taken a shortcut and used my favorite meatballs that I always have on hand in my deep freezer. To the soup I’ve also added lots of fresh vegetables including tomatoes, spinach and carrots. To season the soup, I’ve added smoky cumin, paprika, garlic and lots of fresh cilantro.
This soup is filled with flavor, but isn’t too spicy so it’s great for the little ones. If you want to add some more spice. try adding a few teaspoons of finely chopped chipotle peppers and adobo, or simple some of your favorite chili pepper.

Albondigas (Mexican Meatball) Soup
Yield: Serves 4
1 tablespoon olive oil
1 cup chopped carrots
1 cup chopped onion
1 cup chopped celery
2 cloves garlic, finely chopped
1 (14oz) can diced fire roasted tomatoes
4 cups chicken broth
2 cups water
1 tablespoon cumin
1 teaspoon Mexican oregano (or regular oregano)
1 teaspoon smoked paprika
36 Casa Meatballs
1 (14oz) bag fresh spinach
1/2 cup roughly chopped fresh cilantro
Preheat large soup pot over medium heat. Drizzle with olive oil and add carrots, onion, and celery. Sauté over medium heat until translucent. Add garlic and cook until fragrant. Add tomatoes, chicken broth water, cumin, oregano and paprika. Stir well and bring to a boil over medium heat.
Add meatballs and continue to cook over medium heat for 30 - 35 minutes. When soup is done, wilt in spinach and half of cilantro. Serve soup garnished with additional fresh cilantro.
